Why we love this recipe for Vegetarian Stir Fry Noodles
The Recipe is ready in 20 minutes especially if you chop the veggies and meal prep in advance.
Recipe does not use lot of oil but is based on the flavorful sauce.
Which Noodles we can use for Stir Fry
For the recipe I recommend Thicker and wider noodles so they can get well coated with the sauce but you have options.
Soba Noodles – These Noodles are made from Buckwheat. They have earthy flavor and are darker color. I usually get a large package on Amazon.
Egg Noodles – These are my kids favorite. Look for Chinese or German made Egg noodles.
Rice Noodles – These are typically used in Pad Thai. They have a very short cooking time so pay attention to that as they are more delicate.

The ingredients you will need to make Vegetarian Stir Fry Noodle.

Flat wide Noodles
Eggs – I used eggs as my choice of protein but feel free to use Tofu or another protein of your choice. Make sure to cook it as per requirement.
Veggies – I used Mushrooms and Onions when I made it this time but I have also used Green or Red Pepper, Carrots, Celery and Green onion whenever I have made it before. Cabbage is an excellent choice as well as it gets hidden with the Noodles and kids don’t even notice it.
Dark Soy sauce or Mushroom Soy sauce– Gives the color and deeper flavor to get that restaurant flavor
Regular or light Soy sauce – adds salt and some flavor but doesn’t give that dark color to the dish
Vegetarian Oyster Sauce – If you haven’t used it before, it’s time to get a bottle. It has a rich umami flavor and gel like consistency. If you are not vegetarian, feel free to use the regular Oyster sauce. Vegetarian Oyster sauce typical uses mushrooms rather than Oysters.
Maple Syrup
Chili Oil – For the heat to balance out the flavors

Make the prep.
If you have prepared Noodles or other Chinese dishes, you may have realized that all the prep needs to be done beforehand. This makes the high heat cooking a breeze.
Cut the Onion, Carrots, Mushrooms and Green or Red pepper if you are using in nice thin long strips. If not possible then do

Beat the Eggs lightly and keep aside.
Boil water in a large pan and cook the Noodles as per package instructions. Do not make the Noodles to far in advance. Depending on the type you use, they may turn soggy.

Prep the sauce
Add the Dark Soy sauce, Light soy sauce, Chili Oil, Oyster Sauce and Maple syrup in a small bowl and whisk to combine. Add some crushed Black Pepper if you fancy it but I left it as is.
In a separate small bowl, add Corn starch and Water and using a spoon whisk briskly. There should not be any lumps left.
How to cook Stir Fry Noodles:
Most important aspect of stir fry is to prep everything before you start cooking.
Once prep is done, keep a wok or a shallow fry pan on high heat or medium high heat.
Add Oil and let heat up.
Add Onion and sauté for a minute. While Onion is cooking, add the beaten eggs on another side of the pan. Flip the eggs once after a minute. Let cook for another 45 seconds. Remove from the pan and keep the Eggs aside for later.


Add the Veggies and stir fry for 2-3 minutes. They should not be fully cooked.
Add the prepared sauce and let it come to boil. This will be almost immediately because of the high heat used.


Stir and make sure all the vegetables are cooked well.
Add the Corn starch slurry and mix well.


Add the Noodles and mix well. I would use proper tong for this process so you can move the Noodles around easily.
Add the Egg and mix
You can garnish the Noodles with some toasted sesame seeds but its totally optional.
Recipe Variations
For Vegetarian Stir Fry Noodle recipe, there can be countless substitutions in terms of vegetables.
Feel free to swap Bell peppers, carrots, Green onion, shallots, Boy choy, spinach or Kale.
Keep the same sauce and go wild.
To make it Vegan – Omit Eggs
To make it Gluten free – Use Gluten free noodles such as Rice Noodles and use Gluten free Soy and Oyster sauce

Storing and Making ahead tips for Vegetarian Stir Fry Noodle
To make ahead – Chop all the veggies one day in advance and refrigerate. Prep the sauce ingredients one day in advance and refrigerate.
