    Stained glass cookie recipe

    Why we love this recipe for Stained Glass Cookies:

    Easy to make.

    So colorful!!!!!

    Perfect addition to Christmas Cookie box

    The ingredients you will need:

    Butter
    Powdered sugar
    Egg, beaten
    Almond extract and Vanilla Extract
    Salt
    All purpose flour
    Jolly ranchers

    Step by step instruction for Stained Glass Cookies:

    Stained glass cookie recipe
    • Do the prep - Preheat oven to 375. Line a cookie sheet sheet with Parchment Paper. Sift the All Purpose Flour and keep aside. Crush Jolly Ranchers.
    • Whip Butter and Powdered Sugar together in the Stand mixer.
    • Add the previously beaten Egg,, Almond extract, Vanilla Extract and Salt and mix.
    • Slowly start adding flour to the bowl making sure it is mixing well and finally dough is formed.
    • Knead the dough using hand until it all comes together. Make a ball and wrap in cling wrap.
    • Chill the dough in the refrigerator until firm about an hour.
    • Remove from the Refrigerator and Roll to ¼” thickness on well-floured surface.
    • Cut any shape with cookie cutters but making sure there is a enough space at the center for making Stained glass design. Using a small circle cookie cutter, cut the middle round of the cookie.
    • Place the cut out cookie on Cookie sheet lined with Parchment paper.
    • Place about 1 tsp. of crushed Jolly Rancher in the middle cut out.
    • Bake at 375° for 8-10 min. Cookies should not brown.

    Recipe Variations:

    If you do not have Almond Extract, you can use only Vanilla extract in its place.

    Decorate with some store bought Royal icing

    Storing and Making ahead tips:

    In an air tight container, cookies can last for up to a week.

    Equipment

    • Oven
    • Stand or Hand mixer

    Ingredients

    • 1 Cup Butter
    • 1 Cup Powdered sugar
    • 1 Egg beaten
    • 1 ½ tsp. Almond extract
    • 1 tsp. Vanilla Extract
    • 1 tsp. Salt
    • 2 ½ Cups All purpose flour
    • 10 Jolly Ranchers

    Instructions

    • Preheat oven to 375 degrees Fahrenheit.
    • Line a cookie sheet sheet with Parchment Paper.
    • Sift the All Purpose Flour and keep aside.
    • Crush Jolly Ranchers and keep aside separated by color
    • Place Butter in bowl of Stand Mixer with Paddle attachment and start whipping first at moderate speed and then little higher speed. Or use Hand Mixer if that's what you fancy.
    • Add powdered sugar to the Stand Mixer bowl and blend.
    • Add the previously beaten Egg,, Almond extract, Vanilla Extract and Salt. Mix properly it should take another 2 minutes or so.
    • Using a Half cup measure, slowly start adding the Flour to the Mixer. Every time you add the Flour change the speed to Mix and Flour is mixed change to higher setting for a 30 seconds. This will ensure Flour is not flying all over your kitchen.
    • Once all the Flour is added and mixed in, let the mixer until dough is formed.
    • Remove the dough from the Mixer on to a cool surface preferably Marble. Although cool surface is preferable is not necessary.
    • Knead the dough using hand until it all comes together. Make a ball and wrap in cling wrap.
    • Chill the dough in the refrigerator until firm about an hour.
    • Remove from the Refrigerator and Roll to ¼” thickness on well-floured surface.
    • Cut any shape with cookie cutters but making sure there is a enough space at the center for making Stained glass design.
