For the Salad:
Spring Greens
Cucumber
Apple
Mandarin Oranges – use fresh orange slices if you would like
Cheese – whichever you have on hand. Mozzarella or Qeso Fresco is great.
Green or Red Pepper

For the dressing:
Cilantro - also called Coriander leaves
Mint - Fresh works best. Use dried Mint if Fresh is not available
Garlic - Use fresh for best flavor
Olive oil - EVOO or regular both would work.
Lemon juice
Maple syrup - Use Honey if you need a substitute
Salt and Pepper

Cut the Cucumber and Apple into medium size pieces
Cut the Green/Red Pepper in small-medium sized pieces.
Mix all the ingredients for the dressing in a blender. Add water as needed to make it pourable consistency.
