    Paneer Taco Salad

    This Paneer Taco Salad is the very best combination of freshness from the garden produce and sizzling grilled smoky Paneer.
    The Salad features Marinated Grilled Paneer, fresh corn, Tomatoes, Cucumber, Lettuce and Tortilla chips.
    A simple dressing of Salsa and Yogurt brings it all together.

    This salad will make a hearty vegetarian side dish or a full meal for your Vegetarian friends. If you are mainly serving Meat or Chicken Tacos for a party and wondering what to serve for Vegetarian friends, look no further. You have your answer right here.
    Grilled Paneer here adds everyone’s favorite smoky flavor to the Salad.

    Ingredients for Paneer Taco Salad:

    Paneer – Typically found in grocery stores and also in some Costco stores
    Red Onion – In a pinch even yellow or white onion will do
    Red Pepper, Green Onion, Lettuce, Tomato
    Avocado or Guacamole – I cut up a whole avocado but you can use homemade Guacamole or even store bought one. Just do what is easy for you. See Tips section below on how to make homemade Guacamole. When you go to the Store gently press the avocado a little, it should be soft to touch but not too soft. That shows that it is ripe to eat.
    Tortilla chips – Any brand will do
    Taco seasoning
    Pam Oil spray and Canola oil
    Store bought Salsa and Yogurt – to make the super easy dressing

    Step by step Instructions:

    Prep the Ingredients:

    Shred the lettuce, cut onion in small pieces. Take the corn off the cob. Roast the Corn beforehand if you like smoky flavor to the corn.
    Chop Red Pepper, Green Onion and Tomatoes.

    Grill the Paneer:

    Mix the taco seasoning with Canola Oil or the oil of your choice.
    Cut Paneer in the cubes as shown.
    Pour the marinade over the Paneer cubes and mix well making sure each Paneer cube is properly coated with marinade.
    Heat a grill pan (I used a cast iron grill pan) on medium stove.
    Place the Paneer cubes on the hot grill pan and grill about 3 minutes on one side and 2 minutes on the other side.
    You may need to make 2 or 3 batches depending on the size of the pan.

    Make the Yogurt Dressing:

    In a blender mix Salsa and Yogurt and blend well.
    You can add a tiny bit of water if you think the mixture is too thick and not spreadable.
    Keep aside.

    Assemble the Paneer Taco salad:

    In a Salad bowl, mix lettuce, Onion, Corn, Tomato and mix.
    Add grilled Paneer, crushed Tortilla chips, Salt and Pepper.
    Sprinkle chopped Green onion and add Avocado if using.
    Add the dressing and mix the Salad with delicate hands.
    Serve and enjoy!!

    Tips, Tricks and Questions on the Grilled Paneer Taco Salad:

    Can I make Paneer at home?

    You can definitely make Homemade Paneer. I find this recipe the easiest to make.
    If you are short on time by all means just get the Paneer from Indian store or Costco.

    How to cut the corn off the Cobb:

    The easiest way to do it is I simply hold the corn upright and slice the knife through the kernels.

    Tips on Corn:

    Buy Fresh corn and use immediately. When Corn is fresh it is at its sweetest flavor. You could also use frozen corn. Just bring it to room temperature before adding to the Salad. I really like roasted corn from Trader Joes.

    How to make Homemade Guacamole?

    Cut the Avocado in half. There is a large seed in the middle of the Avocado. Remove the seed. Take out the pulp and mash. Add some chopped Onion, Salt, lemon juice and finely chopped green chilies. Mix properly and enjoy immediately. Avocado turns brown if exposed to the air for a while.

    Storing and Making ahead tips:

    You can cut the veggies except the Lettuce and Avocado and store in separate airtight containers for a few hours.
    Grill the Paneer few hours in advance and store in a container
    Make the dressing separately and store separately.
    When its time to serve, Cut the avocado and Lettuce. Mix everything together, drizzle the dressing and serve.

    • 14 oz Paneer 1 block
    • ¼ Cup Red Onion chopped measure
    • ½ Cup Red Pepper chopped measure
    • ¼ Cup Green Onion chopped measure
    • 1 Avocado
    • 2 Lettuce chopped measure
    • 1 Cup Tomato chopped measure
    • 1 Cup Corn
    • 1 Cup Tortilla chips or more as per liking
    • 2 Tbsp. Taco seasoning
    • Pam Oil spray
    • 2 Tbsp. Canola oil
    • ½ Cup Store bought Salsa. Use more as needed
    • ½ Cup Yogurt

    Instructions

    Notes

    Do not cut the avocado and keep for too long as it will turn brown.
    Make sure to get the Avocado that is just ripe. If it is too hard when lightly squeezed, it is not ripe yet.
    If you like your Tacos hot, use the Salsa that says "Hot" on the bottle. If you don't like it spicy, use the one that says "Mild".
    You could mix some Tabasco sauce in the Taco seasoning mix before grilling the paneer to give it some heat.

      I always make paneer the same way, so when I saw this taco salad version I knew I had to make it for our Meatless Monday dinner. The entire family raved about how tasty it was. It will definitely be a repeat recipe for us.
