    Kale Chickpea Salad with Tahini Dressing

    Delicious Kale salad with chickpeas, Carrots and Creamy Tahini dressing.

    This Salad is filled with hearty greens, carrots, protein from Chickpeas and Sesame paste in the dressing. This Salad is a perfect option for those who prefer to meal prep in advance. The Salad also keeps well in the refrigerator for a day, just store the dressing separately.

    Tahini dressing used in this Salad should be a keeper in your recipe book. This dressing can be used in multiple ways. Not only can you use this on various salad but you can also use it as a basic sandwich spread.

    Ingredients for Kale Salad with Chickpeas and Tahini Dressing

    For the Salad Assembly

    Kale, Carrot and onion - The veggies

    Pecans and Chickpeas - Proteins

    Cheese - protein and creaminess

    Nutmeg - The special something

    Kale salad ingredients

    For the Tahini Maple Dressing

    Tahini or Sesame Paste - For the creaminess and provides heat in the cold months

    Maple Syrup - For the sweetness

    Lemon Juice- For the Tartness

    Extra Virgin Olive oil and Cold water - Bring the Dressing together

    Dijon Mustard

    Salt and Pepper

    How can I change up this Chickpea and kale Salad with creamy Tahini dressing

    Although Kale gives better texture, you can use Spinach or Romain lettuce.

    Use pickled onions to give that certain tang to the salad.

    Use Shallots or green onion instead of Red onion

    Use different beans such as White beans or cooked Red Beans instead of Chickpeas.

    Kale Chickpea Salad with Tahini Dressing

    This delicious Kale salad is made with chickpeas, Carrots and Creamy Tahini Lemon dressing.

    Ingredients

    For the Salad Assembly

    • Kale Carrot and onion
    • Pecans
    • Chickpeas
    • Cheese
    • Nutmeg

    For the Dressing

    • 2 Tbsp. Tahini or Sesame Paste
    • 2 tsp. Maple Syrup
    • 2 Tbsp. Lemon Juice
    • 2 Tbsp. Extra Virgin Olive oil
    • 1 tsp. Dijon Mustard
    • 2 to 3 Tbsp. Cold Water
    • Salt and Pepper per taste

    Instructions

    • In a bowl or another container, mix all the ingredients for the dressing.
    • Using hand blender, blend everything together.
    • Add ¼ teaspoon of salt and two turns of Black pepper and mix again
    • Adjust salt as needed.
    • In a large bowl, mix all the ingredients for the Salad.
    • Toss well. Drizzle with dressing.

    Notes

    This salad stays well in the refrigerator for a day. Mix all Salad ingredients and cover with plastic wrap and refrigerate. Store the dressing separatly and drizzle when ready to eat.
