How can I change up this Chickpea and kale Salad with creamy Tahini dressing
Although Kale gives better texture, you can use Spinach or Romain lettuce.
Use pickled onions to give that certain tang to the salad.
Use Shallots or green onion instead of Red onion
Use different beans such as White beans or cooked Red Beans instead of Chickpeas.

Kale Chickpea Salad with Tahini Dressing
Ingredients
For the Salad Assembly
- Kale Carrot and onion
- Pecans
- Chickpeas
- Cheese
- Nutmeg
For the Dressing
- 2 Tbsp. Tahini or Sesame Paste
- 2 tsp. Maple Syrup
- 2 Tbsp. Lemon Juice
- 2 Tbsp. Extra Virgin Olive oil
- 1 tsp. Dijon Mustard
- 2 to 3 Tbsp. Cold Water
- Salt and Pepper per taste
Instructions
- In a bowl or another container, mix all the ingredients for the dressing.
- Using hand blender, blend everything together.
- Add ¼ teaspoon of salt and two turns of Black pepper and mix again
- Adjust salt as needed.
- In a large bowl, mix all the ingredients for the Salad.
- Toss well. Drizzle with dressing.
