These delicious fluffy Funfetti cream cheese cookies have the most delightful flavor. These are perfectly sweet with a nice tang from cream cheese. What’s more? There are hidden surprises of chocolate chips in these sweet nuggets.

Colorful – You can add whichever color of Sprinkles that you like and you can increase the amount of sprinkles as well.
Not overly sweet but you can add more sweetness easily – These Cream cheese cookies are not overly sweet but they do have chocolate chips in them for the little heavenly surprises. If you would like more sweetness, drizzle some melted chocolate on top.
They freeze well.

The ingredients you will need: to make these Funfetti Cream Cheese Cookies:
The dry mixture :
All Purpose Flour
Baking Powder
Corn starch
The Wet mixture:
Granulated Sugar
Butter
Cream Cheese
Egg
Vanilla extract
Additions:
White chocolate chips – For the goodness in every bite
Sprinkles – For color of course. I ordered mine from Sweetapolita
Step by step instruction:
Set the oven to 350 degrees.
Place parchment paper on a cookie sheet.
Prepare the dry Mixture:
Mix All Purpose flour, Baking powder, Corn Starch and tiny bit of Salt. Stir with a spoon and set it aside.
Prepare the wet mixture:



In a Stand mixer, mix Butter and Sugar together, scrape the bowl.
Add Cream Cheese and mix.
Add the Eggs and mix
Add Vanilla Extract and mix properly.
Take the dry mixture and stir in Sprinkles and Chocolate Chips.
Slowly add the dry mix to the stand mixer bowl while the Mixer is running at a stirring speed.
When the first half cup gets gently mixed, add the next half cup and let mix.
Add all of the dry mixture and mix everything together properly at no more than medium speed.
The mixture will be slightly sticky but still manageable. Take some dough as shown in the picture and roll it on your hand. Then slightly press the dough to make a disc like shape.



Bake:
Place on a cookie sheet. Make the rest of the cookies and fill up the cookie sheet. Keep about an inch of distance between the cookies.
Place the cookie sheet in the refrigerator for 10 minutes.



Once cold, place in the oven and bake for 13-14 minutes. The cookies should not be brown on sides or on top. They are only slightly brown at the bottom.
Serve as is with a cup of warm tea.

FAQs for Funfetti Cookies:
Can you Freeze these Cookies – yes, you can freeze them Store in an airtight container and they will last a month. Just thaw for a few hours on the kitchen counter before you serve.
Cookies feel dry – Cookies can feel dry if there is too much flour in them. I suggest you sift the flour first, stir with a spoon and then measure so you get only exact amount needed.
Cookie Dough is sticky – The dough can be sticky but should not be overly sticky. You can keep the dough in the fridge for 10-15 minutes and then roll it. Alternatively use a few drops of water to dampen the hands slightly to make rolling easier. Don’t over-wet the hands.
Place the cookie sheet on the center rack so they can bake at even temperature and don’t burn.
Cookies are not sweet enough – I find the sweetness in these cookies just perfect but if you would like you can drizzle some powdered sugar on top or melt some chocolate in microwave at 20 second interval and drizzle on top.
