    Easy Christmas Cookies

    These super easy Christmas cookies are based on cookies from Vienna in Austria. Very well-known cookies in all over Europe and are often seen in pastry shops. The original shape of the pastries is Crescent but mine are simple round shaped cookies making the baking much easier.

    Christmas Cookies

    The ingredients you will need:

    Christmas Cookies Ingredients

    Butter - for the melting effect
    Sugar regular for baking the cookies and Powdered Sugar for coating after the bake
    Egg Yolk and baking powder - for binding
    All Purpose Flour, Almond and Pecan Flour – Main ingredients
    Vanilla Extract – because the name suggests
    Orange Blossom Water – for the last ooomph!!

    Step by step instruction:

    Preheat oven to 350 degrees Fahrenheit.
    In a bowl, mix All Purpose flour, Almond Flour, Pecan Flour and Baking Powder and keep aside.
    Cut Parchment paper per the size of you cookie sheet and line the cookie sheet. Keep aside.
    In a stand mixer bowl, add Butter and Granulated Sugar and whip with Paddle attachment until the mixture is light and fluffy. Always start at the slower speed and when Butter starts incorporating with sugar, increase the Mixer speed.
    Add the Egg yolk and Vanilla Extract and mix again for couple of minutes at high speed. Make sure to scrape the mixture from time to time using flat spatula.

    Using half cup measure, pour the Flour mixture slowly in the Mixer. After every pour, let it mix before the next pour.
    Repeat until all the Flour Mixture is in the Stand mixer.
    Increase the Mixer speed a little and let it form a thick dough like structure.
    Place a large parchment paper or wax paper on the counter.
    Remove all the dough from the Mixer and place on the Parchment paper.

    Using hands mix the dough and make it come together to form a round shape.
    Using rolling pin, spread the dough on the Parchment paper as shown in the picture.
    Using any kind of cookie cutter or sharp edged bowl, cut desired shapes for the cookies.
    You may have to repeat the rolling and cutting process few times to make sure no dough is wasted.

    Place the cut cookies on the cookie tray.
    Place the cookie tray in the Oven
    Bake for about 22 – 24 minutes.
    Keep a close watch on cookies after 20 minutes because the bottom of the cookie may start to burn.

    While the cookies are baking, In a plate, place generous amount of powdered sugar. We will need enough to properly cover the cookies.
    Remove from the oven and while they warm, using pastry brush, quickly brush Orange Flower water over the cookie with one quick swift movement. Make sure not to douse the cookies with water as the flavor can be very strong.

    After the Orange flower water, place the cookies in the plate with Powdered Sugar and cover them with Sugar.
    We used very little Sugar in the dough so all the sweetness will come from powdered Sugar.
    Once properly covered, place on cooling rack.

    Recipe Variations:

    Instead of using a mixture of Almond and Pecan flour, you can switch with all Almond or walnut flour
    Use Rose water instead of Orange Blossom water

    • 1 Egg Yolk
    • ½ Tbsp. Vanilla Extract
    • 2 Tbsp. Orange Blossom water
    • 2 Cups Powdered Sugar approximately

    Instructions

    • Preheat oven to 350 degrees Fahrenheit.
    • In a bowl, mix All Purpose flour, Almond Flour, Pecan Flour and Baking Powder and keep aside.
    • Line the cookie sheet with parchment paper
    • In a stand mixer bowl, add Butter and Granulated Sugar and whip with Paddle attachment until the mixture is light and fluffy.
    • Add the Egg yolk and Vanilla Extract and mix again for couple of minutes at high speed while scraping the bowl from time to time.
    • Using half cup measure, pour the Flour mixture slowly in the Mixer. Mix well.
    • Remove the Dough from Mixer and on the counter mix well using hands. Create a round shape.
    • Using rolling pin, spread the dough on the Parchment paper as shown in the picture.
    • Using any kind of cookie cutter or sharp edged bowl, cut desired shapes for the cookies.
    • Place the cut cookies on the cookie tray and Bake for about 22 – 24 minutes.
