    Crispy Cauliflower Bites

    Perfect method for making flavorful Crispy Cauliflower bites with simple ingredients, this recipe will make a perfect side dish or addition to Salad, bowls and more!!

    Ingredients for bite sized Cauliflower Fritters:

    Cauliflower

    Gram flour /Lentil flour/Chickpea flour/Besan - needed for binding

    Rice Flour - Adds crispiness

    Ginger Garlic paste

    Turmeric powder

    Chili paste/chili powder

    Yogurt

    Garam Masala/Curry powder

    Salt and Black pepper

    Crispy Cauliflower bites

    How to make these Crispy Cauliflower Bites:

    Cut the Cauliflower into bite sized florets. If you use a whole head of Cauliflower it will serve 4 as an appetizer.

    In a sauce pan or a frying pan, add the chickpea flour/Besan and on a low flame roast the flour for a few minutes until the flour starts turning to a red hue. At this point the Flour also smells fragrant. Using a spatula stir almost continuously to avoid burning.

    Take the pan off the heat. Remove the flour immediately as below otherwise it is very quick to burn.

    In a medium sized bowl, add Chickpea flour, Rice flour, Ginger garlic paste, Turmeric powder, Chili powder, Garam Masala, Salt and Black pepper.

    Mix everything well.

    Add Curd/Yogurt to the mixture. Mix well.

    If the mixture is too thick, add couple of Tbsp. of water and mix.

    Add the Cauliflower florets and cover them well with the Flour mixture.

    Let rest for 10-15 minutes.

    You can either bake or deep fry the Florets.

    To bake, spray oil on the bottom of 9 x13 baking pan or you can also use parchment paper covered cookie sheet.

    Place the florets in the pan /cookie sheet. Bake for 25 minutes at 400 degrees Farenheit. This will bake the florets and is a healthier method but the Cauliflower will not be super crispy.

    Alternatively, you can heat 1 cup of Canola oil or any high temperature oil in a deep sauce pan and slowly place the florets in the hot oil. Turn over once after 1 minute or when slightly browned. Remove on a paper towel to absorb excess oil.

    Third method would be to bake as above and then deep fry for 30 seconds each side or as needed for extra crispiness.
